Our natural organic classic method Blanc de Blancs ages 30 months on the lees. The dosage is zero, as are the added sulfites.
What we look for in this goblet is the expression of our limestone hills: minerality and structure. Even in lean vintages, where the fruit is less evident, our blend is capable of fully expressing the characteristics of this magnificent soil.
Tasting notes:
Bright straw yellow and remarkably persistent perlage. With fine and persistent perlage, it shows mineral hints accompanied by notes of bergamot, cedar, white peach, apple, mint and paste
from leavened bread. Fresh and with great finesse, it makes for an inviting and satisfying sip. The long finish gives hints of citrus and mineral sensations.
