Of the Ongina stream. A pruning is done in mid-August. Fog on autumn mornings and ideal climatic conditions allow the development of “noble rot” in the plant.
Features
Color: This late harvest wine with botrytized grapes from
noble mold, shows a deep yellow color with a golden hue and amber shades.
Nose: Intense nose, flavors of yellow fruit, dried apricot in particular, followed by notes of saffron, dried figs, toasted almonds, marzipan. Taste: Great sweetness, never cloying thanks to good final acidity.Persistent with light smoky hints.
Pairing: Suggested pairings are with cookies and pastries,with soft cheeses and gorgonzola.
